“Gazpacho is a chilled Spanish soup that is refreshing on a hot summer day. This basic recipe for cold gazpacho soup can be dressed up with some croutons or hot sauce, depending on your taste. Gazpacho and other cold soups are an excellent starter for a dinner, and also work well served with bread for a light and healthy lunch. Don't be fooled by the long ingredients list, as this gazpacho cold soup is a breeze to prepare.

Prep Time: 5 minutes
Total Time: 5 minutes
Ingredients:
  • 1 cucumber, sliced into chunks
  • 4 large ripe tomatoes
  • 1/2 bell pepper, any color
  • 2 cloves garlic
  • 1 celery rib, chopped
  • 1 tbsp lemon juice
  • 1/2 sweet onion, quartered
  • 3 tbsp red wine or balsamic vinegar
  • 1/2 tsp salt
  • dash black pepper
  • 1 tsp chopped fresh parsley
  • 1 tsp chopped fresh basil
  • 1/4 tsp cayenne pepper (optional)


Preparation:
Simply combine all the ingredients in a blender or food processor, except the fresh herbs and process until smooth. Stir in the herbs, refrigerate until cool and serve with bread.”






Another version of Gazpacho 
Gazpacho Moreliano

I don’t recall ever having Gazpacho soup before, I’ve tried so many international dishes that I tend to forget. What I remember, is the exquisite Gazpacho Moreliano I was introduced to, during Easter break. 

After our late night return from Tecuman Colima, I spent the night at my friend V’s house and that’s where I first knew about this dessert. When she asked, “Would you like some Gazpacho?” I immediately assumed it was soup until I looked at it. “This is not Gazpacho!” I said. According to V, Gazpacho Moreliano is very easy and quick to make, plus all you need, is a few pesos. 


Ingredients:
  1. 1 Pineapple (or half, depending on the number of people)
  2. 1 jicama (depending on the size and the number of people)
  3. 1 or 1/2 liter of orange juice (it can vary: mango juice, orange/mango juice
  4. 1 or 2 mangoes
  5. 1 cucumber
  6. 100 grams of Cheese
  7. Crushed pepper (this is optional)
  8. Salt
  9. Lime 
  10. Valentina sauce


Prep Time: 10-15 minutes
Preparation:
Chop all the fruit into small chunks, put it in a deep plastic container, pour the juice and the fruit in the container. Mix it up and your delicious Gazpacho is ready! You can sprinkle cheese and put crushed pepper, lime, salt and Valentina sauce if you want, and you’re ready to go!
